Summertime is such a great time for fruit, but sometimes we go overboard in our purchases and can’t eat what we buy. The other day I had some peaches that weren’t going to last much longer so I wanted to use them. Sometimes I freeze my fruit for smoothies, or even dehydrate it; but today I decided to try to make some peach sorbet for dessert.
My issue with making sorbet is that most recipes require special equipment. I don’t want another appliance in my kitchen, nor do I want to boil a sugar solution on a hot summer afternoon. So I decided to try out my own recipe. I put my trusty immersion blender to the test.
Here’s what I did for four servings:
- 3 peaches
- 1 tablespoon sweetener (honey, sugar, agave)
- 1/4 cup water
- Lemon juice (optional)
I added all ingredients to a container and blended until it was super smooth. Add less sweetener if your peaches are super sweet, more if not. Taste it to make sure the sweetness works for you. Then put it in the freezer for four hours. But the key here is that every hour, you’ll need to blend it with your immersion blender. This will ensure that the ice crystals are small and makes a really smooth sorbet.
It was delicious, super kid friendly and fun to make. Henry added the fruit and sugar. He was proud to be part of the process. And yes, Henry was wearing a super hero costume during dessert the other night.
The ideas are endless for sorbet. You can use so many fruits -- strawberries, melons, plums. And how about this: I’m going to try to toss in a basil leaf next time for basil peach. Or how about strawberry tarragon sorbet? Or watermelon lime? I can’t wait to keep experimenting!
