It’s always a special treat when my two-year-old son Henry and I get to cook together. Last week we made a special (healthy-ish) Valentines’ treat for my wife.
My take-aways from the experience are:
- Beets do a great job of turning your frosting pink.
- A heart-shaped pan makes everything more festive. (The next morning I made heart-shaped spinach and eggs!)
- Healthy muffins are pretty good, but adding cream cheese frosting makes them even better.

The healthy muffin recipe we used is here, but the star of this muffin was the slightly pink frosting. The pink frosting that we made – free of artificial dyes! – included: 1 package of cream cheese, 4 Tbs of sugar, 1 tsp of vanilla and a small cube of a roasted beet (which, yes, I happened to find in my fridge at the time). Blend it all together and you’ll have a delicious pink cream cheese frosting, perfect for muffins or other Valentine treats.
