Mom was right, breakfast is the most important meal of the day!
The School Nutrition Association (SNA) has designated this week, March 2-6, as National School Breakfast Week. At schools across the country, food service directors will encourage students to participate in school breakfast programs. This year, many schools will promote their breakfast programs with the “Power Up with School Breakfast” campaign, a program that uses super heroes to promote the benefits of eating breakfast.
I thought this was a good day to take mom’s advice to heart and make a healthy breakfast of oatmeal. This time, I made my morning oatmeal with steel cut oats. (These take about 30 minutes to cook – you can use old fashioned rolled oats or quick or instant oats if you are in a hurry.)
This recipes makes about two servings:
¼ tsp salt
¼ cup dried fruit (raisins, cranberries, etc.)
½ cup steel cut oats
1 tablespoon honey (optional)
2 table spoons plain yogurt (optional)
Add salt, and dried fruit to water, bring to a boil. Slowly stir in oats. When oats begin to thicken (after about 5 minutes), reduce heat. Simmer for about 25 minutes, or until desired consistency. I added a little plain yogurt and honey to my steaming bowl of oats – yummy!
