For some reason, beets get a horrible name. But the truth is that they are so deliciously sweet when roasted. And when a silky roasted beet is paired with a crispy sweet apple or pear, it’s hard to resist. Combine that with the mess that beets can make, and it’s one fine dish for a two-year-old.
Take a look at the video, but I warn you that it’s not for the faint of heart - beets are some powerful mess-making roots. (As a quick note for the viewers -- Henry usually feeds himself, but in this case I decided to feed him because beets are so messy.)
I must admit that when I first made these sandwiches I was taken aback a bit. I just threw the apples and beets together one day and accidentally found Henry’s favorite food. It has been a case of true love ever since.
