Most of my cooking is about just figuring out what's in the kitchen and pulling it all together. And usually it starts around 6:00 p.m. when I get home and want dinner served by 6:40 p.m. I'm a big believer in quick.
It was no different the other day when Henry, our three-year-old, asked to help me prepare the evening's meal.
There's nothing to this dish, a broccoli salad, but what I love about it is that while Henry is a great eater, he definitely eats better when he takes pride in the meal. When he knows he made it, there is little chance he'll not eat it. Check out Henry's pride in the broccoli salad:
And while I'm biased, I have to say the video is pretty cute... there's nothing quite like watching your kid chow down on broccoli and Brussels sprouts.
Henry's Quick Broccoli Salad
2 tablespoons of olive oil
1 tablespoon of balsamic vinegar
1 teaspoon of powdered garlic
1/3 cup of Parmesan cheese
Salt & pepper to taste
Mix the ingredients together and enjoy!
(If you can round up a kid to help you make it, even better!)
