Thanks again, Weelicious, for another treat. I came across this posting for dried bananas and thought it was a great idea. I love dried fruit: it's a great, fun snack, and I love the idea of making my own without preservatives (I'm allergic to the preservatives in many commercial dried fruits) and the added sugars. And I knew it was meant to be when I was at the market and saw a bunch of very ripe bananas at a fire-sale price.
According to Weelicious:
Banana Flats
(Makes Approx. 12 Strips)
2 Bananas
1. Preheat oven to 250 degrees.
2. Slice the bananas lengthwise into 1/8 inch strips.
3. Place the banana strips on a Silpat or parchment-lined baking sheet and cook for 1 hour and 15 minutes.
4. Cool and serve.
First things first: Henry and I peeled the bananas together. It was an easy way to make it interactive. But here's where I differed from Weelicious -- and I'm not thinking it was for the better. I cut the bananas lengthwise in half rather than in 1/8 inch strips. It allowed me to put an entire bunch of bananas on a single cookie sheet, but... I ended up having to bake the bananas for 3.5 hours!
Still, the end result was awesome: chewy, sweet, delicious bananas. They lasted three weeks in the fridge and were a fun, sweet after-daycare snack. Enjoy!
