I have strong summertime memories of lemonade from when I was a kid and want Henry to have similar memories as well. So as a special treat, I decided that on a hot afternoon we should make mint lemonade.
I asked Henry to pick fresh mint from our backyard. (We can’t pick it fast enough!) He came in with a small mint tree which I washed, and we picked the leaves off it. We then crushed the mint leaves in some ice and mixed it with the juice and zest of one lemon, water and honey to taste. It made a delicious and refreshing treat.Even living in Chicago, I like to make sure Henry knows that food comes from the earth. And while we can’t raise cattle or grow lemons, we can grow herbs, tomatoes and veggies.
I think it’s the little things that we’ll all remember, like mint-lemonade from the garden. I’ll ask him in 20 years if he recalls that hot summer afternoon treat. I’m sure I will.
