One of my favorite things my parents used to make me when I was younger was something they called “Egg in the Hole in the Middle.” It is a recipe that I completely forgot about until I was in college and needed a quick breakfast that I could take with me to keep me full until lunch. The ingredient list is very short and it’s a very simple dish to execute -- but for some reason, as a kid, I thought it seemed so cool.
The main star of this recipe is the egg. Eggs used to get a very bad rap for being high in cholesterol, but today we know that eggs are packed with nutrients and protein. If you keep it to one egg a day, it can actually be a benefit to your health instead of a detriment.
This recipe calls for one piece of good sturdy whole wheat bread, one egg and some butter or cooking spray. To create the “hole in the middle,” my parents always just used the rim of a glass, but it would also be fun to get creative and use a cookie cutter in a festive shape! This recipe makes a fiber and protein rich breakfast that will keep you full and rev your metabolism. It's perfect for on-the-go mornings!
Ingredients
- 1 slice whole wheat bread
- 1 egg
- Butter or cooking spray
- Cookie cutter or wide-rimmed glass
Directions
- Spread a thin layer of butter on both sides of bread (or skip this step if using cooking spray)
- Take your glass, or cookie cutter, and cut out a hole in the center of the bread. Make sure the outer crusts stay intact!
- Spray a small frying pan with cooking spray (if you aren’t using butter) and place over low heat. Add bread.
- Carefully crack one egg into the “hole in the middle.”
- Let toast cook for 3-4 minutes or until the bottom of the egg has set.
- Flip toast and cook on the other side until egg is cooked to your preference.

In Boy Scouts we called it "Egg in a Frame" I still make this and absolutely love it! The center toast is the best!

Our friends, the Carsons, eat this breakfast as the Carson family tradition. They call it "Eggs in a Nest."
