Recently we had boys' night at my house -- my son and I made dinner together while my wife was out of town. I figured we should mix up the dessert a bit. Henry has been loving his peanut butter and jelly sandwiches lately, so why not turn that into a dessert treat and fill it with fresh fruit on whole grain bread?
This was a fun one because we assembled the sandwich together. The base of the sandwich was whole grain bread. Then I brought out some fruit that I had in the fridge: oranges, blueberries and apples.
A little real peanut butter (Best. Peanut. Butter. Ever.) was added for the “sandwich glue” and then, as Henry likes to say, the “desserty” part began: drizzles of chocolate syrup.
It was a really fun dessert to prepare because it was unique, it was participatory and it really was tasty. Just the concept of a "chocolate sandwich" made Henry giggle. We both got excited about our creation and took photos.
Then Henry explained that the crust isn’t actually “desserty” enough, so I removed the crust for him.
And then the chowing began. He wolfed down the entire thing!

I think he liked it! What a great way to jazz up the plain peanut butter sandwich. Great idea.
