Today we have a recipe contributed by Jovita Flores, HSC’s manager for Parents United for Healthy Schools. Her recipe is for turkey meatballs that are packed with tons of veggies and flavored with fresh herbs and chipotle sauce. The recipe calls for lean ground turkey instead of ground beef or pork which makes these meatballs lower in fat than the traditional meatball. As we are in the middle of Organic Harvest Month, you may be able to find many of these ingredients at your local farmers market.
Today’s recipe is in English and Spanish. Try this healthier take on meatballs; you won’t be disappointed!
Ingredients
- 1 pound ground turkey
- Minced garlic
- One chopped onion + one sliced onion
- Fresh herbs (marjoram, basil, mint)
- 1 egg
- Sea salt
- 1 cup water
- Carrots
- Potatoes
- Pumpkin or squash
- Olive oil
- Tomatoes
- 1 can of chipotle in adobo
Directions
- Mix the turkey, garlic, chopped onion, half the chopped herbs, egg, and a little bit of salt.
- Optional: You can grate the carrots and squash and mix with the turkey, or you can add the veggies to the sauce after you make the turkey meatballs and sauté everything together in a pan with a little oil.
- Blend tomatoes with onion and one cup water and pour the liquid in the pan to make a sauce for the meatballs.
- Add carrots, potatoes and diced pumpkin/squash to the sauce if they are not already in the meatballs.
- Add half the herbs and little chipotle sauce.
- Enjoy!

- 1 libra de pavo molido
- Ajo picado
- Cebolla picada
- Hierbas de olor frescas, mejorana, albahaca, hierbabuena
- 1 huevo
- Sal de mar
- Agua (1 taza)
- Zanahorias
- Papas
- Calabaza
- Aceite de olivo
- Jitomates
- Otra cebolla cortada en rajas
- 1 latita de chipotle en adobo
Procedimiento
- Mezcla el pavo, ajo, cebolla picada, la mitad de las hierbas picadas, el huevo, y tantito sal.
- Opcional: se puede rallar las zanahorias y calabaza y mezclar con el pavo, o se puede echarlas en cubitos después al caldo haz bolitas de pavo y saltéalas en un sartén con poquito aceite.
- Licua los jitomates y la otra cebolla con una taza de agua y echa el líquido al sartén para el caldo.
- Echa las zanahorias, papas, y calabaza cortados en cubitos si no los rallaste.
- Agrega la otra mitad de las hierbas y poquita salsa de chipotle.
- ¡Disfrutar!
